The Air Co., backed by Toyota Ventures, JetBlue Technology Ventures, Parley for the Oceans, and Carbon Direct Capital Management, makes vodka using CO2 that’s been captured before it’s emitted into the atmosphere. The product is made from just two ingredients, water and CO2. The water is separated into hydrogen and oxygen through electrolysis. CO2 is mixed with the separated hydrogen in a carbon conversion reactor, resulting in the ethanol that ultimately becomes vodka.
